So, let’s begin from a 101 lesson: are you able to define gelato? Let us give you a hand:

gelato is a frozen dessert of Italian origin, artisanally made by master gelato makers, using carefully researched, high-quality ingredients and traditional preparations.

Now we’re ready to reveal to you 5 Fun Facts about our masterpiece, gelato, but you will have to confess to us how many of these you knew! Let’s go, but we’re pretty sure you weren’t aware of them before!

01 Do you know who invented gelato?

Many things were told about the invention of this fancy and flavoury dessert… What we know is that gelato traces its roots all the way back to 1565, when Bernando Buontalenti entered the scene at Caterina de’ Medici court. He was a painter, architect and engineer in addition to being an amateur cook, much appreciated by the princess. He’s generally credited today as being the inventor of gelato, as he seems to be the reason for which gelato contains dairy. For the records he first introduced milk and eggs to the mixture, changing the Arabic recipe of sherbet, an ice-cream ancestor similar to Italian granita or to a vegan sorbet, introduced in Sicily many years earlier, that requires the use of up to 400 flowers to scent water and ice. When Caterina de’ Medici became Queen and wife of King Henry II, she brought the Buontalenti recipe to France, making gelato an international dessert. (source Wikipedia)

03 Why do you think most people eat artisanal gelato in the cone?

Historical facts report that, before the advent of the cone, gelato was served and tasted in glass or ceramic cups – how fancy! – expensive containers, fragile and which basically did not allow the sweet, cold tastiness to be enjoyed even on a walk. What better reason for gelato makers to come up with the idea of the cone and decree its great and definitive success: the cone is definitely better!

But, to be exact, the first person who introduced gelato in the White House was the first lady of the United States and wife of James Madison, fourth president of America, who was a great gelato lover: gelato was still a very impressive dessert because modern freezers were not introduced yet.

It’s warm outside already and we only answer “gelato” to these beautiful days, but… Can you tell artisanal ice-creams from industrial ones?

But hey, do not confuse it with industrial ice-cream: it’s true that the two look and taste similar, but do you know what’s the difference between gelato and ice cream? Taking into account gelato is the Italian word for ice-cream, you would think so, but there are actually a few differences between the two, and we just cannot wait to tell you.

Both ice-cream and gelato are made with similar ingredients (a custard base that includes milk and sugar), but that’s about all they have in common. Each sweet treat has its own distinct history, ways of being produced, and unique qualities—from flavor to texture. We’ll break down the differences between gelato & ice-cream so you can get a better idea for which one to choose. If you ask us, you may already know the answer, which is – of course, a great cone of gelato, no need to say where to get it from, we are not biased!

What is gelato made of?

We’ve just mentioned that the two main ingredients are milk and cream, but the amount used in each one results in different desserts. So, what is gelato made of? And, as many people ask us, does gelato contain dairy? As it can be assumed, “ice cream”  (usually) contains more cream than milk, while gelato is made with a higher proportion of whole milk than cream. Another ingredient that distinguishes the two is eggs; ice cream includes egg yolks, while gelato is (most of the time) completely egg-free.

But the real difference lies in the process and how they are made, and ours are made from real Italian ice-cream recipes

Indeed, both desserts need to be churned in order to be made: ice-cream is churned at a higher speed, which basically results in more air incorporated. The overall result? Easy. Gelato turns out to be a real creamy and scoopable goodness, while ice-cream results to be less consistent and contains as much as 50% air – this is why it’s usually described as “fluffier” than gelato.



Temperature and storage tips

Shall we move on or have we already convinced you that gelato and ice-cream are synonymous in name only? Uh? Oh, okay, got you!

Then, once they’re both made, they are stored at different temperatures to make each one maintain the right consistency. Ice-cream is typically served frozen, around -20C°, whereas gelato is typically stored and served at a slightly warmer temperature, around -10/12C°, which doesn’t make it completely frozen (although the word in italian literally means “frozen”, funny, isn’t it?), making the texture softer and silkier than ice-cream.

The cherry on the cake is that gelato usually contains less cream and eggs and fewer fats as well! Tasty, creamy…it’s a literal piece of art! We bet you have already made your choice, and we stand with you!

Last spring we introduced to you the Nano gelato container: a take away pack designed for two people, perfect to share with your loved one, both at home watching Netflix and at the park during a sunny day. For St. Valentine’s Day we had to take one more step for our gelato loving couples, and what’s more romantic than a sweet treat to share on the most romantic day of the year? Long live love in all shape and form! Here at Unico we celebrate the love for gelato and high quality fresh ingredients every day. But, for St. Valentine’s, our pastry chef crafted new, unique products, devised for a very special protagonist, your love. This 2020 for S. Valentine’s day we prepared two couples-sized proposals:
  • a heart shaped gelato cake, customizable with up to two of your or your better half’s favorite flavours. You can book it via email or pop in one of our stores and order one.

Vegan is Ok!

Ramen, soy burgers, poke bowls, beetroot chips, cauliflower mayonnaise, seitan and quinoa based products… You name it! There’s a vegan alternative for any type of food. Did you think that we’d let you miss out on vegan gelato? Of course not… It’s true, vegan food has been a trend for a while now, but there’s more to it than fashion. It’s not simply about being on a diet or not either (sadly, a zero calories gelato has not been invented yet). What vegan food is all about is eating healthy and taking care of your own body, as well as of the environment (we’ve got your back, planet Earth!). Here at Unico we pay close attention to our ingredient’s quality – from the supply chain to their processing – because we know that your wellbeing starts from nutrition. We are investing a lot on vegan food, and, as top quality gelato is our passion and Unico’s signature product, we decided to combine what we love for what is healthy and environmentally friendly! So, after the success of our vegan smoothies, we decided to try the Unico version of vegan gelato. During the spring, we worked hard with our master gelato maker and we came up with two new ideas: the vegan pistachio, in June, and the peach sorbet, flavour of the month this October! The pistachio was a huge success! A lighter version that didn’t loose the creaminess of the original flavour. Some called it “The pistachio lovers’ Paradise”. Why? Because every vegan alternative can be just as good as its classic version. For our novelty, for example, the lack of milk gets compensated by using more fresh pistachios in the gelato! Thanks to this, to our delight, we found that the taste of the vegan version is more intense than the classic one. Don’t believe us? Come and try it at one of our stores! We know it won’t let you down. In October westarted producing our newest peach sorbet. This is more than a fruit gelato, it’s fruit in the form of gelato! Peach flesh makes up for 72% of the ingredients in our recipe. We found a local supplier that grows excellent peaches, which generate an explosion of flavours to the palate. It might be a sorbet, but its texture is creamier than the ones of the other Unico sorbets. It was a great surprise even for us! Thanks to peach, our sorbet family is getting larger: strawberry, lemon, vegan chocolate, mango, raspberry, tangerine, vegan pistachio.

Gelato loves summer: discover our summery products!   Gelato is good in all seasons, but – as you may imagine – in summer it’s way even better! Summer season is a fantastic period for us, who love experimenting and creating new flavors: raw materials exponentially increase – seasonal fruit is perfect for making gelato – and everybody is ready to try new and fresh flavors. Nothing makes our gelatomakers happier, they can’t wait to create new delicacies!   First of all, let us introduce you our flavor of the month. For June we chose Tropical Yoghurt, a mix of fresh and thirst-quenching summer flavors. Tropical Yoghurt is a combination of our delicious Frozen Yoghurt, completely natural, and mango puree, which gives it that #unico flavor: that’s what summer tastes like! Located in our Portobello store during the weekend are up to 20 different flavors of gelato. You will be spoilt for choice!     Continuing with the news here at Unico, we go with you at the discovery of the pastry proposal of the month: for June we chose the Hazelnuts Semifreddo, a creation of our own, made by our creative Pastry Chef Lorenzo. It’s a delicious but light dessert, perfect during those sultry heat days or just to end a summer dinner in the best way. Made with 100% Italian Hazelnuts, just like the most of our raw materials.   Milkshakes and iced coffees go back in the spotlight of Unico summer proposals: iced coffee, iced latte, iced cappuccino, and flavors for all desires. Ask and your wishes will be met! Since in our workshops we can’t stay still for a second, we decided to propose you some mixes of flavors that you already know: the sophisticated Chocoberry (dark chocolate 33% – strawberry 66%); the super fresh Tropical (mango 33% – strawberry 66%) and Cocoberry (raspberry 33% – coconut 66%), a space-time travel to an atoll of the Maldives.     We also made a summer version of our hot chocolate, which is iced, not to give up on a delicious (but fresh) touch even under the blazing sun. Even our homemade Pannacotta covered with raspberry jam is back in our stores. As you can see, we love summer. Come and visit us in our stores, with us even summertime will be #unico!  

Tropical Yoghurt: summer has a #unico flavor!

Holidays are still far away, but as it gets hotter and hotter everybody feel the need to eat something light and fresh…We at UNICO want summer to arrive ASAP and that’s why we decided to create a new flavor, a fresh gelato that takes your taste buds on holiday. We were so excited when we tasted it that we decided to make it flavor of the month: June is Tropical Yoghurt! June’s flavor is a reinterpretation of our legendary Frozen Yoghurt, a simple but tasty gelato, perfect with cream and fruit flavours. Tropical Yoghurt combines our Frozen Yoghurt with a super fresh mango puree in a thirst-quenching mix! It will be available in our stores from 1st June! The good news don’t stop here! May was a month of ideas, projects and arrangements: we closed a lot of collaborations with many London restaurants, Italians and not, that appreciate our way of being and working. As we already told you, we love making partnerships with realities which are similar to us, and London is the right place to create successful synergies. Gelato goes well also with refined menus, giving a really nice touch to every cooking idea. Our expert gelato-makers constantly try new and surprising combinations and in May we tested a lot: in our Bromley workshop we created the gelato cacio e pepe seasoned with bacon flakes, the carbonara, the basil sorbet, and the very special ginger and clove. To us, testing is the key to originality. We’re open to culinary project development in partnership with restaurants: we would like to create tasting sessions that mix UNICO’s proposals with the partner restaurants’ ones, to propose new combinations made by our creative Master gelato-makers and their Head chefs.
